Where do you live?

Sydney, Australia!

What do you do?

I am a singer/songwriter!

What does veganism mean to you?

Veganism to me means health and happiness. I am vegan for my health, for the animals, for the planet and for the future.

What is your most memorable dining/eating experience?

Hmm, this is a hard one! I’m spoiled for choice in Sydney with multiple vegan restaurants. I would have to say though, Fresh Blend at Mosman has the best Acai Bowl I have ever eaten (and I have eaten a lot). It has become a weekly ritual to go and devour a Buckiwi bowl in the Mosman sunshine. Such a great local business run by awesome local people.

I love curry. Who doesn’t love curry?

If you could invite 3 people (historical or current) to dinner who would they be?

I would invite Thich Nhat Hahn. If you don’t know who he is, please, PLEASE, pick up one of his books and prepare to be enlightened. My friend, Caitlin sent me his book “How To Eat” and I read the entire thing in one evening, I couldn’t put it down.

I would invite Miley Cyrus, an amazing and inspirational lady, who happens to be vegan (YES!) and I would invite Ellen DeGeneres. Another amazing, vegan woman who I am sure would have so many stories to tell. Imagine the food and conversation between this diverse bunch of people!

What would you serve?

Oh man! This is a tough one. I think I would serve some kind of curry. I love curry. Who doesn’t love curry?

Sweet or savoury?

Why can’t we have both? (Probably sweet. Mangoes > everything.)

I have recently eaten so many carrots that my skin has started to glow a pale tinge of orange.

Where is your favourite food destination?

Fresh Blend in Mosman, Bondi Wholefoods and Yulli’s in Surry Hills!

What’s your speciality dish?

I feel like I’m yet to discover my speciality dish. I shall continue to experiment in the kitchen, cooking amazing food and get back to you.

What food best describes your personality?

I find it difficult to describe my own personality, so I asked my sister Kate. She said “mangoes”, I said “why?” and she replied, “I don’t know. I guess they’re more interesting than grains”.

What’s your favourite thing to eat on a hot summers day?

Mangoes. Lots and lots of mangoes.

Cold winters night?

You’ve been asked to contribute a recipe to an upcoming cookbook. What is it?

I’m still using other people’s recipes when it comes to cooking! But one thing I know I have customised and perfected is my two ingredient cookies! All it is is banana and oats blended up and then add in anything you like! Choc chips, berries, raisins etc. Then they go in the oven for 10 or so minutes and they are so delicious!

If you were a vegetable what would you be?

Describe a normal day in the life of  Lucy.

I wake up at around 5.30, practice yoga then head to the kitchen to prepare breakfast; Usually raw, sometimes oats. I watch some YouTube, do some admin, check the emails, you know the drill. Sit at the piano/mixing desk and work on whatever I am doing at the moment. Lunch, dinner, snacks and more snacks (right now I am obsessed with roasted beans) and of course spend time with the ones I love. Right before bed I will practice yoga again and then roll myself into bed and fall asleep instantly (if you have trouble sleeping, not anymore).

What’s your guilty pleasure?

Raw chocolate. Specifically Pana Chocolate. The Sour Cherry and Vanilla flavour, oh my!

What did you have for breakfast?

This morning I had oats + cinnamon + banana.

You’re on death row and it’s your last meal. What do you eat?

A mango mono-meal with a side of Acai.

What are your plans for 2016?

Eat more delicious food, continue my regular yoga practise and explore inversions, release more music, laugh often and learn how to make raw cakes and slices!

Anything else you’d like to add?

If you have always wanted to try veganism or maybe you’re a little bit curious, just do it. Don’t overthink it. Commit to a week, then a month and so on. I do not hesitate in saying that it will be the best decision you ever make and you can enjoy life with a clear conscience and glowing health.
