Margaret Chapman aka The Plant Strong Vegan

Where do you live? 

Fort Worth, TX

What do you do? 

I currently develop vegan recipes for my blog ThePlantStrongVegan.com – where I also share product reviews, talk about cruelty-free beauty and things I enjoy most. It’s not a bad gig!

What does veganism mean to you? 

Veganism to me means living a life without causing unnecessary harm. In every aspect of my life – from food to clothing, makeup, etc. I don’t consume sentient beings, use products tested on animals and I try to live my life with meaning and kindness for every being.

If I were a vegetable I would be a potato. I love carbs, so being a carb just makes sense.

What is your most memorable dining/eating experience? 

The first thought that comes to mind is the trip I took to Maine after graduating high school. My parents wanted to cook a fresh meal in the kitchen of the room we rented. We went to the local docks and my dad bought live lobsters.

After we got back to our room, my dad started a large pot of water to boil. I didn’t realize you put the lobsters in the water while they’re still alive.

Once the water started boiling, my dad put each lobster in one by one. For a brief moment you could hear this shrieking noise and it instantly made my heart sink. I couldn’t touch my lobster, it made me too sad.

At that time in my life I ate fish and dairy. I’m ashamed to say I never felt guilty for eating them, but after that experience and educating myself on the realities of my choices – I wasn’t going to take part in being naive anymore.

If you could invite 3 people (historical or current) to dinner who would they be? 

That’s an amazing question, seeing as how I’m socially awkward – I wouldn’t be able to socialize with anyone “famous”.

I’d have to pick 3 of my favorite Instagrammers – Mary Mattern (@NomYourself), Cara Schrock (@Casch_Rock) and Andrea Frenke (@a_vegan_frenke). They all seem like such incredible women! I would love the opportunity to share a meal and chat with each of them.

What would you serve? 

Definitely a spread of vegan goodies, including a salad bar, cauliflower wings, lots of veggie sushi and some sort of Thai noodle entree. Thai food is my weakness.

Sweet or savoury?

Sweet!

Where is your favourite food destination?

Portland, OR

Ever since my trip to Portland a couple years ago, I have not been able to forget that beautiful and insanely delicious meal.

What’s your speciality dish?

I love making so many different dishes. I’d have to say that my speciality is probably wings. I test out different vegetable-based wings all the time, my personal favorites are broccoli wings. Baked, not fried and double coated in BBQ sauce (with a side of homemade ranch for dipping!).

What food best describes your personality?

My personality can best be described by Thai food – it’s unique, sweet, sometimes salty and at times complex. That pretty accurately encompasses me and my personality as a whole.

What’s your favourite thing to eat on a hot summers day?

Summers are brutal here in Texas, I stay cool with hydrating fruits like watermelon. I love to blend up frozen watermelon for slushies during the summertime. Mixed with green grapes – it’s so good!

My guilty pleasure has to be spoonfuls of peanut butter with coconut sugar on top.

Cold winters night?

During the winter I love lots of roasted vegetables, stews and carb-heavy meals. Anything with potatoes is guaranteed to make me happy. Like Shepard’s Pie!

If you were a vegetable what would you be?

If I were a vegetable I would be a potato. I love carbs, so being a carb just makes sense.

Describe a normal day in the life of Margaret.

A normal day for me consists of being woken up by my cats pouncing on my pillow. I usually wake up between 8-9, make a smoothie and/or chug a quart of water to get me going. I’d be lying if I didn’t also mention staying in bed for awhile to read emails and check all my social media accounts.

Once I’m awake, I feed the kitty boys. Then I get acquainted with my computer chair and start cracking on my inbox, in my pjs. I’m bad about letting emails pile up.

I like to look through the list of blog post ideas I have and if something sounds good I’ll run with it and write, usually until I get antsy or hungry – whichever comes first. Most lunches I make are either A. super quick or B. recipe testing for the blog. After eating I’ll open any packages I have, sort through my mail and play with the cats.

The end of my day is typically cleaning the mess in the kitchen from the day before, more writing, organizing new content for my pages and cooking dinner.

I’m off to bed between 11-1. I like to spend time writing notes in my phone when I can’t sleep, I always have to download my thoughts into a memo for peace of mind.

I’m not one for planning ahead, but I do have tons of ideas I’d like to work on throughout the second half of this year.

What’s your guilty pleasure?

My guilty pleasure has to be spoonfuls of peanut butter with coconut sugar on top.

What did you have for breakfast?

Lately it’s leftovers or protein shakes, today I tested out a new recipe so I had red pepper tostadas. I rarely eat breakfast foods in the morning, I’m weird. I go back and fourth with smoothies or whatever sounds better.

You’re on death row and it’s your last meal. What do you eat?

Tough question, I’d probably have to say the Buff Burrito from Homegrown Smoker. Ever since my trip to Portland a couple years ago, I have not been able to forget that beautiful and insanely delicious meal.

What are your plans for 2015?

I’m not one for planning ahead, but I do have tons of ideas I’d like to work on throughout the second half of this year. Lots of new Fall/Winter recipes and an even bigger Holiday Gift Guide for my website!
