Hi guys! We’re the sisterly duo from Panaceas_pantry, Kath and Jade.
Where do you live?
We live in the beautiful hills of the Dandenong Ranges, Melbourne.
What do you do?
Jade is a full time mumma and qualified naturopath, looking after her beautiful 19 month old, and Kath is a full time cafe manager.
What does veganism mean to you?
Kath: A total way of life. As well as not just eating any animal products, being kind and mindful of the environment, a sustainable way of living.
Jade: For me it’s a life decision to live gently and sustainably. Adhering to veganism means putting my money where my mouth is, and consciously choosing to spend my dollars/time on things that are free from animal harm. That includes harm to other humans, too. Let’s not forget about the human race 🙂
What is your most memorable dining/eating experience?
Kath: I recently ate at my first ever degustation menu (8 courses!) at a local restaurant (O.MY) and it was AMAZING! They went above and beyond to cater for a vegan menu and I was so impressed. If I could even tell you what half of the dishes were I would share them with you.
If you could invite 3 people (historical or current) to dinner who would they be?
Jade: My Dad, My grandparents. Family over fame, any day.
Kath: Second that! Couldn’t have said it better. Its been far too long.
What would you serve?
Jade: Mexican, for sure! Followed my a vegan Lemon meringue pie, because it is a family favourite.
Sweet or savoury?
Kath: Definitely savoury. Although we tend to make/shoot a lot of sweet dishes on our Instagram our diet is definitely mostly made up of fresh, seasonal fruit and veg. Whether it be a smoothie on as summers morning, a nice hot soup or curry in the winter, or a nourishing salad, we always try to eat for the seasons and include a wide variety, with as many fermented foods and sea vegetables in there as possible.
Where is your favourite food destination?
Kath: Hmm, well, my favourite cuisine is Mexican, so I’d have to choose Mexico. But I love middle eastern flavours, also Indian/Nepalese is always a winner, it’s so hard to choose only one!
Jade: From my travels, my favourite cuisine is Iranian. For future travels, I’m dying to see what the vegan cuisine is like in Central America.
What’s your speciality dish?
Jade: Curry, always. I’m forever cooking curries.
What food best describes your personality?
Jade: Haha, what a cute question. I’d say soup, because I’m pretty easy going, and I am always warm. Seriously, at home I’m always the person with a singlet on, while everyone else is rugged up in layers!
What’s your favourite thing to eat on a hot summers day?
Kath: Fresh fruit, banana ice cream, smoothies… Fresh, refreshing, light foods.
Jade: Chilled raw fruit and loads of coconut water.
On a cold winters night?
Kath & Jade: Cant go wrong with a nourishing homemade soup, stew or curry! Always a staple in winter in our household.
You’ve been asked to contribute a recipe to an upcoming cookbook. What is it?
Kath & Jade: Definitely dessert. We spend hours making wholesome sweet treats, so it would have to be a raw lemon curd tart, our latest obsession.
If you were a vegetable what would you be?
Kath & Jade: Broccoli! Not sure why, it just feels right…
Describe a normal day in the life of Kath and Jade.
Kath: I work full time managing a cafe, so a majority of days you’ll find me there! If not, you’ll usually find me in the kitchen either making treats or something for the household. We live in a house of 6 so there’s always something to do! I love going out for a walk with the fam and playing with my cheeky niece, other than that I can’t seem to find the time for much else!
Jade: I am with my little girl, Frankie, full time. We spend our hours playing in the garden, tending to our vegetable garden, playing and reading. When Frankie sleeps, you’ll generally find me creating food, photographing, reading a novel or trying to sneak in some yoga. Music is a staple, as is a nice long walk with Frankie in the pram.
What’s your guilty pleasure?
Kath: I have a sweet spot for chocolate, can’t go past it!
Jade: Yep, chocolate.
What did you have for breakfast?
Kath & Jade: Usually it’s a smoothie/smoothie bowl or granola with fruit & coconut yoghurt. By the time winter hits a warm nourishing porridge makes its way back onto the menu. Sourdough toast is always a winner, our favourite combos are smashed avo & tomato or natural peanut butter & banana.
You’re on death row and it’s your last meal. What do you eat?
Kath: Hmmmm. I think a mega burrito with lots of guacamole, spicy salsa, chipotle beans, cashew cheese, sauerkraut- I’m getting hungry just thinking about it! Maybe with a cheeky sangria on the side 😉 Annnnnnd now that Jade’s reminded me, yep, I’d have to have some of our favourite vanilla nutmeg ice cream on top because it’s just so darn good! Who knows, maybe ice cream on a burrito is a thing? 😉
Jade: A whole tub of vanilla and nutmeg coconut ice cream.
What are your plans for 2016?
Kath: Professionally, we’re not too sure! We’re taking it as it comes, we’ve already got a lot of awesome things on the calendar this year and we’re lucky to constantly have great opportunities presented to us. To be honest, we’re excited to have no concrete plans and just see what happens. Personally, there are always goals I’d like to reach. Read more, spend more time outdoors, spend less time on technology, build more relationships, work hard, and also take time out too. It’s a long list!
Jade: Work less, yoga more, camp frequently. Plus, I really want to spend more time doing creative things other than my photography. I’m really craving more time for free expression and I’m hoping to take more time for that.
